Seven and a half years ago Eric McWilliams got a job as a baker at the local Sobeys grocery store.
McWillams started at the bottom and worked his way up to manager of the baking department.
McWilliams says his friend actually got him the job at Sobeys and he ended up liking it more than he thought he would.
“My job entails a lot of mixing dough”.
McWilliams explains at Sobeys they bake everything from scratch and everything sold is mainly baked right in store.
“My team and I do overnight shifts from 12:00 a.m. to 8:00 a.m. to make sure everything is out on the shelf as early as possible”.
McWilliams said baking bread is a long process. He explains after mixing the dough it has to sit in the proofer to do the final rise of shaped bread dough for an hour before baking.
On any given day McWilliams says him and his team make bout 100 to 200 loaves of bread and over 1,000 buns.
McWilliams says his favourite thing to bake right now is anything but hot dog and hamburger buns as they are just coming out of that season with summer.
“I really like to make specialty breads like french bread.”
The most popular bread they make is the regular sliced white bread. He says they go through it more than any other kind.
McWilliams says his job is not really that stressful, but there can be stressful times. For instance, the time his team burnt an entire tray of loaves and they had to start over.
